PB&J Thumbprint Cookies

1/4 cup + 2 tbsp coconut sugar

1 cup peanut butter

2 tbsp ground flax

1/2 cup water

1 tsp vanilla

1/2 tsp salt

1/2 tsp baking powder

1 cup gluten free flour blend


Jam of choice


Combine all wet ingredients, mix well. Add dry ingredients. Spoon out onto parchment paper lined cookie sheet. Round into balls then press down with thumb or spoon to make a dip in centre. Spoon jam into centre and bake @ 350 for 15 mins.
