“Cream Cheese” Cookie Dough Truffles

1 (8oz) pkg vegan cream cheese

1/4 cup vegan butter

1 tsp vanilla

1/4 tsp salt

6 cups icing sugar sifted

1/2 mini chips

1 cup chocolate chips

3 tbsp peanut butter

Combine all ingredients except chips, blend well. Fold in chips. Using a mini ice cream scoop, scoop out little balls onto parchment paper lined cookie sheet. Put in fridge or freezer until set. Melt chips and peanut butter until smooth, dip balls in to coat and put back on lined sheet and back in the fridge to set. Store in air tight container in the fridge.
